Happy (Canadian) Thanksgiving to all those Canucks celebrating this weekend.
Well, here it is... Uncle Dano's famous Pumpkin Pie recipe, perfected over many years. I hope you enjoy it as much as I do.
Uncle Dano's Pumpkin Pie
Ingredients:2 eggs slightly beaten
1 small can of pumpkin = 1 3/4 cup (398 ml)
3/4 cup (170 ml) sugar
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/8 tsp. ground allspice
1 can evaporated milk = 1 2/3 cup (379 ml)
1 or 2 deep dish frozen pie shells
Instructions:Mix ingredients in order, gently. (If using an electric beater use on low speed and only until ingredients are combined. Do not overmix especially at high speed as this may cause the pie to turn out runny.

Pour filling into pie shells and place on a baking sheet.
Bake at 425 degrees Fahrenheit for 15 minutes.
Reduce temperature to 350 degrees Fahrenheit and continue baking for an additional 45 minutes (or until knife inserted comes out clean).
Serve at room temperature, with optional whipped cream or vanilla ice cream.
Yes, I use canned pumpkin and frozen pie shells. Sure makes things simpler and there really is no difference in taste. This truly is a very easy recipe that produces a delicious product.
