I am currently training my firemaking level. At what level should I switch from willow logs to maples?

Depends really. You'll burn at the same rate, so theoretically you'll want to switch as soon as you can. But since Willow logs are quite a bit cheaper, you might as well save your money and burn them till you're 5-10 levels above Maple. This will ensure that there would be absolutely no hesitation in lighting, slowing down that first light of the row.

A few of my friends burnt Willows all the way to 99 because it was quite a bit cheaper. I guess it depends on how much money you want to spend on fire making. I don't thing the amount of time to make each fire is really a factor because after the first one, it's just about automatic.

do willows till 50 then do maples
so you dont get that delayed fire starter thing

Most people do either Willows or Maples all the way to 99. It depends on you.
IF you dont want to spend a whole lot do willows but it will take forever. If you dont care about money then buy maples and it will be faster to 99.
If your going for 99 or not, do maples for a faster way to which ever level you want :P

Like I've said, doesn't matter how you do it. I changed to maples at 80 which seemed like a pretty good switch. As someone put it to me, "If it takes longer to burn the willows than to get the money and buy maples, you might as well go with maples."

I agree, somewhere between 75-80 would be a good time to switch to maples. But honestly I have never been interested in firemaking.
