deciding what to write my 500 word research assignment on:
'the big bang theory,' 'mission to mars,' 'nasa,' 'sun & stars,' 'alien life,' 'constellations,' 'space travel,' 'telescopes.'

Talk about Space.
Choose the one that has the most to talk about and the most easily researched
my guess would be constellations or space travel, i'll try constellations, thank you reventon.
I would think nasa or telescopes would be easiest
meh, i find constellations more interesting :P
I'd go with Sun & Stars, accurate science and not too much theoretical information or anything.
I would not write any of the essays.
