Farming trees are on timers, but not exact planting timers. There occurs certain 'growing times' at pre-determined intervals. For example, fruit trees 'grow' at 4:00, 8:00, 12:00, and 16:00, no matter
when you planted them.
Plus, if you pay the farmer and your tree becomes diseased, it takes additional time for the tree to grow to full size (one additional growing period).
So If I plant one at 3:59.9 it'll grow in an instant? :o
The times I gave were examples. But yes, it is possible that your tree can grow one step instantly.
I don't think anyone has ever found out to be honest. Plus I think it's on a every "so long" time meter, so it's not the same time every day.
