Firemacking looks the coolest but its one of the easiest.I would say my favorite is summoning because its hard to get all the charms and its expensive..... :)

My favorite cape would have to be Mining.
I'll have it soon :D,It looks very nice, and is a very tedious 99.
An Overall awesome Cape, and Skill.

Of those that i have i have to say Herblore is my favorite. .. .of those i wish i had, i would say Runecraft or Slayer
