Cydia. One of the best possible things you can do, in my opinion. Can't go wrong with free, either.

IS jail breaking worth it?

From my experiences, yes. However, I tried (with permission) to jailbreak my sister's 3rd gen ipod touch, and I couldn't get it to stick. It kept having issues with rebooting, so I said screw it, keep it regular.

That being said, I missed soo much from my own jailbroken 1st gen that hers did not have. It might not be for you, but it's better to check out jailbreaking now rather than after everything is 'perfect' with a non-jailbroken setup.

jailbreaking is worth it because you can get free apps, awesome customizations and 3rd party add-ons/apps. But if you have 3.1.2 firmware i do not suggest jailbreaking using blackra1n as I've heard bad things about it.

flashlights are always quite usefull, and the Photoshop app comes in handy a lot, when i want to post facebook stuff or something that's too dark or i just want to make it rainbow(:
there are some cool music recognition programs but the require a mic.

I'd suggest stuff like pandora radio if you use that kind of thing

I got my Ipod Touch for christmas also. And I jailbroke it using Black Ra1n. It jailbreaks fine and everything, but the booting is the problem. When you want to reboot, you have to plug it into your computer then run black ra1n, it doesn't refresh everything, but it just boots it for you. I rarely turn my ipod off so it doesn't have much of an issue, I just leave it locked and it saves a lot of battery.

That was one of the issues my Sister's iPod touch was having. She's got the new 3rd gen, and I can jailbrake it quite easily. Just after installing a few programs that require a restart, it won't work correctly. Not only does it say to plug it into iTunes, it says it is unable to recover. That's a horrible problem at this point, so I just had her stick with the default unjailbroken iPod.

Pretty sure the problem doesn't exist if you jailbrake with a Mac using the Dev Team's solution. They haven't updated their Windows variant since 3.0 or 3.1, so we're stuck with BlackRa1n for now.
