How about a demonstration with light? Ie. Prisims, mirrors, materials of different refractive indecies. You could demonstrate refraction, reflection, and diffraction! As well as create some cool images.
You could build a "light spedometer" because when light passes through different mediums it slows down. Have a vacumn tube with the default 3.0x10^8 m/s then go from there.
That would be fun
Another idea is to get a nice telescope and measure the radiation emitted from a star of your choice. From this you can tell what the star is made of, what gases surround it, and the temperature. This one would be slightly more involved as you'd need to aquire a telescope that can see more than your eye
