See how he dipped the fish in beer before eating it? That would have knocked it out. The miniscule amount of chlorine put in tap water is enough to kill those things, so the alcohol in beer would have been enough to knock it out if not kill it.

Snail, crayfish (aka crawfish) and lobsters all have to be cooked live. Literally straight into a pot of boiling water. If they're not cooked live, they can be poisonous. Eating it live is no worse.
