How do you get your Defence points level up? Im stuck on level 1.

simple, go to the crossd swords over your inventory, and select block as your fighting style (also called defensive)

On the inventory screen select the two swords crossed over each other and go down to (usually the third) option and click on it and attack different monsters with it and get exp to eventually level up.
