The double exp weekend will start on 12th of march.

for construction it says that you can do this:

I'm sure they listed that as an example.
What I'm sure is that anything you do, that isn't obstructed by set XP rewards or trade-ins or bonuses other than the weekend's will work.
Like I could compost a bin and get 2.7x the xp in the first hour.

If I'm wrong, I'm screwed, I already planned ahead, and it seems like everything is bought out.

Yes you can, but you cannot use sacred clay hammers or any other boosts. 3x xp weekend cancels out all bonuses.
